The beauty of this simple caramel apple treat is you can customize it however you feel.

We recommend rolling the caramel apples in chopped peanuts while they’re still warm for a little sweet & salty crunch.

Ingredients:

  • 6 Envy Apples
  • 14 oz Werther’s Soft Caramels, unwrapped
  • 2 Tbsp milk
  • Chopped nuts (optional)
  • Craft type sticks or carefully washed and dried branch sticks

Instructions:

  1. Wash and dry apples.
  2. Remove the stem from each apple and carefully insert stick into the top.
  3. Lightly butter a baking sheet.
  4. Place all Werther’s Soft Caramels and milk in a microwave safe bowl and microwave for 2 minutes, stirring once at the halfway mark. Allow melted caramels to cool slightly.
  5. Roll each apple quickly in caramel sauce until well coated. Place on prepared sheet to set.

Optional: Coated apples can be rolled in chopped nuts for extra crunch.

 

Baked Envy Apples With Nutella and Crumble Topping

Baked Envy Apples With Nutella and Crumble Topping

We bet you’ve never made an apple dish where the apples are the actual dish. This is sure to impress guests and family members alike.

Ingredients:

  • 6 Envy Apples
  • ¾ Cup Dark Chocolate Chopped
  • ½ Cup Chopped Roasted Hazelnuts
  • 1 Cup Instant / Rolled Oats
  • ½ Cup Dried Coconut
  • 2 Tablespoons Flour
  • 1/3 Cup Butter
  • 2 Tablespoons Brown Sugar
  • Maple Syrup or Honey to serve

Instructions:

  1. Chop the chocolate finely and combine with the chopped hazelnuts.
  2. Core the Envy Apples and then score the skin around the apple a few times and cut a small slice from the top and bottom – this will make the apple more stable and give room for the crumble topping.
  3. Arrange the Envy Apple slices in a lined baking dish.
  4. Fill the center of each apple generously with the chocolate & nut mixture (reserve about 2 tablespoons for the topping).
  5. Pre-heat the oven to 350 degrees F.
  6. Combine the oats, coconut, flour, butter and brown sugar and mix well.
  7. Top each apple generously with the crumble mixture creating a little mound on top of each, sprinkle with reserved chocolate nut mix.
  8. Bake the apples for 20-25 minutes or until the crumble is golden and the apples just starting to soften.
  9. Serve with a drizzle of maple syrup or honey.

 

No-Bake Envy Apple “Donuts”

No-Bake Envy Apple Donuts

Ingredients:

  • 4 Envy Apples
  • 8T Honey
  • 8T Peanut Butter
  • 8T Cream Cheese
  • 3T Shredded Coconut
  • 3T Chia Seeds
  • 1T Minced Chives

Instructions:

  1. Slice Envy Apples horizontally to create thick circular wedges.
  2. Remove apple core using small round cookie cutter.
  3. Finish each Envy “donut” with the following topping combinations:
    • Top honey-coated Envy Apple with shredded coconut.
    • Top peanut-coated Envy Apple with chia seeds.
    • Top cream-cheese coated Envy Apple with minced chives and drizzled honey.

Envy Apple Pumpkin Pie

Featuring a caramelized apple upper crust that’s guaranteed to make your Instagram (and taste buds) pop.

Pie Filling Ingredients:

  • 15 oz pumpkin puree
  • 14 oz sweetened condensed milk
  • 2 tsp pumpkin pie spice
  • 1 tsp vanilla extract
  • 3 eggs yolks + 1 whole egg
  • small pinch of kosher salt
  • 1 frozen pie crust

Apple Topping Ingredients:

  • 1 stick butter, melted
  • 1 tsp ground cinnamon
  • 1 T brown sugar
  • 2 Envy Apples, thinly sliced on a mandolin

Instructions:

  1. Preheat oven to 425 degrees.
  2. In a large bowl, whisk together all ingredients for pie filling until well combined.
  3. Place the frozen pie crust on a baking sheet and then fill the crust with the pumpkin pie filling. Combine the melted butter, cinnamon, and sugar.
  4. Very gently toss the apple slices in the butter mixture to coat.
  5. Begin with the larger slices and shingle in a circle just inside the crust.
  6. Repeat with smaller slices until they come together in the middle.
  7. Bake for 15 minutes, then lower the oven to 350 and cook for 15-20 minutes more until set. Allow to cool completely.
  8. Slice and serve!

Legally, we’re supposed to say the bourbon is optional. So there. We said it.

Ingredients:

  • 2 ounces bourbon
  • 4 ounces pumpkin spice apple cider
  • 1 Envy Apple, diced
  • 1 tsp pumpkin spice
  • 1 tbsp butter
  • Demerara sugar
  • Envy Apple slices
  • Rosemary
  • Cinnamon stick for garnish

Instructions:

  1. Sauté diced Envy Apples in butter and pumpkin spice for 5-10 minutes.
  2. In a glass, combine bourbon and pumpkin spice apple cider, top with sautéed diced apples.
  3. Garnish and serve.

Ingredients:

  • 4oz Vodka
  • 4oz Apple Schnapps Liquor
  • 8oz Cranberry Juice
  • 1 Envy Apple

Instructions:

  1. Add all ingredients to a cocktail shaker filled with ice.
  2. Shake well.
  3. Strain into two martini glasses.
  4. Slice Envy Apple into thin wedges.
  5. Garnish each glass with one Envy apple wedge.

 

Cinnamon Envy Apple Smoothie

Cinnamon Envy Apple Smoothie

An apple a day keeps the doctor away, but what about a glass full of this healthy apple blend?

Ingredients:

  • 1-2 Envy Apples
  • 1 ripe banana
  • ½ cup Greek style yogurt (Alternative: coconut or plant-based yoghurt)
  • ½ cup almond or plant-based milk
  • Pinch of cinnamon
  • 6-8 ice cubes

Instructions:

  1. Cut 2 thin, perfect slices from the middle of the apple to create a disc.
  2. Cut the remaining part of the apple into cubes, removing any seeds but keeping the rosy skin.
  3. Place the diced apple in a blender with the broken-up banana, yogurt, milk, cinnamon and ice. Blend until smooth and creamy.
  4. Take the apple slices and cut in half to garnish.
  5. Divide the smoothie between two glasses and add the sliced apple and dust the tops with a pinch of cinnamon.

This ruined flavored sparkling water from a can for us, so we hope to extend that opportunity to you.

Ingredients:

  • 1 Envy Apple
  • 16 oz Sparkling Water
  • 2 Mint Sprigs
  • Honey, to taste

Instructions:

  1. Thinly slice Envy Apple.
  2. Pour sparkling water into two glasses and add Envy slices to each glass.
  3. Add a sprig of mint to each glass along with blueberries, strawberries, and Envy slices.
  4. Let the drink mixture sit in the fridge for at least 1 hour.
  5. Warm honey in a microwave safe bowl for 5-10 seconds.
  6. Stir honey into each drink just prior to serving.

Shaved Brussel Sprout Salad With Envy Apples and Cranberry Vinaigrette

While the apples are obviously the star of this show, the homemade cranberry vinaigrette is worthy of best supporting actor here.

Salad Ingredients:

  • 2 lb brussel sprouts, very thinly sliced (on a mandolin is best!)
  • 2 Envy Apples, small diced
  • ½ cup dried cranberries
  • ½ cup crumbled goat cheese
  • 2 T finely chopped parsley

Vinaigrette Ingredients:

  • ¼ cup olive oil
  • ¼ cup lemon juice
  • ¼ cup dried cranberries
  • 1 T honey
  • ¼ tsp kosher salt

Instructions:

  1. In a small sauce pot, slightly warm all of the ingredients for the vinaigrette. Remove from heat and allow to sit while prepping remaining ingredients. You are softening the cranberries!
  2. Once cranberries have softened, blend ingredients until smooth.
  3. Toss the sliced brussel sprouts and diced apples in the vinaigrette, then top with crumbled goat cheese, parsley, and cranberries. You can garnish with fresh parsley leaves for extra color.
  4. Fun serving tip: Tightly pack a small ramekin with the brussel/apple mixture (or can use a measuring cup if you don’t have a ramekin) and then turn upside down on a plate. Then top with the remaining ingredients!

FINALLY, a recipe worth getting a waffle iron for.

Ingredients:

  • 1 cup all-purpose flour
  • ½ tsp kosher salt
  • 1 tsp cinnamon
  • 2 tsp baking powder
  • 2 Tbs brown sugar
  • 2 eggs
  • 1 cup milk
  • 4 Tbs unsalted Challenge Butter (½ stick), melted
  • 1 Envy Apple, peeled & cored
  • 4 Tbs unsalted Challenge Butter (½ stick), room temperature
  • Maple Syrup, to taste

Instructions:

  1. In a large bowl, whisk together flour, salt, cinnamon, baking powder, and brown sugar
  2. In a smaller bowl, whisk together eggs, milk, and melted Challenge Butter
  3. Make a well in the dry ingredients, and mix in the wet ingredient mixture until just combine
  4. Using a cheese grater, grate the peeled & cored Envy Apple. Fold grated Envy Apple into the batter.
  5. Prepare waffle iron with nonstick spray or by brushing melted Challenge Butter on the non-stick surface
  6. Ladle ¼ of the batter mixture (recipe yields 4 waffles) into the waffle iron and cook waffle according to manufacturers’ instructions.
  7. Remove waffle from the waffle iron, top with 1Tbs of room temperature Challenge Butter and maple syrup, to taste.

Note: You can finely dice Envy Apple if you do not have a cheese grater

 

Sweet Potatoes and Envy Apple Gratin

Sweet Potatoes and Envy Apple Gratin

Think of this as a ratatouille, but with apples & sweet potatoes and parmesan and also it’s better than any ratatouille you’ve ever had.

Ingredients:

  • 3 Envy Apples
  • ½ C panko breadcrumbs
  • ¼ C grated parmesan cheese
  • Salt and Pepper
  • 1 1/2LB Sweet Potatoes
  • 1 C Heavy Cream
  • ½ teaspoon thyme, chopped (optional)

Special Equipment:

  • Baking dish that holds about 3qts
  • Mandolin if you want extra assistance with slicing the apples and sweet potatoes

Instructions:

  1. Preheat the oven to 400 degrees.
  2. In a small bowl, mix panko and grated parmesan, season with salt and pepper and set aside.
  3. Peel sweet potatoes and cut into ¼ inch rounds.
  4. Slice Envy Apples into four quarters, remove core, then cut crosswise into ¼ inch rounds
  5. Starting on the side of the baking dish, tightly shingle sweet potatoes and Envy slices one by one, repeating and moving in a spiral ending in the middle of the dish.
  6. Season generously with salt and pepper. Then, pour cream evenly over the top.
  7. Sprinkle chopped thyme over the top, if desired.
  8. Cover baking dish tightly with foil and bake in the middle rack of the oven for 40-45 min.
  9. Sweet potatoes will be fork tender.
  10. Remove the foil and sprinkle the panko parmesan mix on top.
  11. Then, bake uncovered for another 5-10 minutes until golden brown.
  12. Garnish with thinly sliced Envy Apples and a sprinkle of parmesan cheese.

 

Roasted Turkey and Envy Apple Sandwich Bites With Blackberry Mustard

Roasted Turkey and Envy Apple Sandwich Bites With Blackberry Mustard

If you haven’t had a turkey sandwich with apples in it, you’re doing it wrong.

Sandwich Ingredients:

  • 8 thin slices of sourdough or your favorite bread
  • 4 T butter, softened
  • 16 slices of roasted turkey
  • 8 slices of smoked gouda or provolone cheese
  • 1 Envy Apple, cored, and thinly sliced

Mustard Ingredients:

  • ¼ cup Dijon mustard
  • ⅓ cup finely chopped California Giant blackberries
  • ¼ tsp kosher salt

Instructions:

  1. Stir together ingredients for the mustard and set aside.
  2. Butter one side of each slice of bread and then place on a surface butter face down. Evenly spread blackberry mustard on all slices of bread. Place 1 slice of cheese and 2 slices of turkey on each piece of bread. Place about 4 slices of apple on EVERY OTHER piece of bread, and then top with the slice next to it with no apples. You should now have a sandwich that is bread – mustard – cheese – turkey – apple – turkey – cheese – mustard – bread.
  3. Preheat a large sauté pan or grill pan (my favorite!).
  4. Grill or sauté each sandwich on both sides until golden brown and cheese is melted. (If bread is golden before the cheese is melted, put the sandwiches in a 400-degree oven until the cheese melts).
  5. Allow sandwiches to cool slightly so that cheese doesn’t ooze out. Trim the sides of the sandwiches to square it off and then cut into 4 bite size pieces. Eat warm!
